Steak and Cheese Stuffed Pobalno Peppers

Since we have been quarantine, I have been creating new dishes. Let’s face it, I have nothing better to do. LOL!! While grocery shopping at the international market, I came across some huge poblano peppers. My first thought was, “what can I make with those?” I also picked up some shredded beef and cheese because I thought about Philly cheesesteaks and fries. Then I had a bright idea to make steak and cheese stuffed peppers.

POBLANO PEPPERS

Wash poblano peppers and cut in half. Pre-heat oven to 350 degrees. Base peppers with olive oil and place in the oven for 10 minutes or until peppers start to brown.

In a large skillet on medium heat, cook peppers and onions in olive oil until soft. Add beef to skillet and add all seasonings. Add minced garlic and cook till beef is medium. Remember beef is thin and still has to go into the oven.

Once meat is ready, drain meat and stuff the peppers. Top with cheese and place in the oven for 5-7 minutes. Take out the oven and serve with black beans! Enjoy.
